Chili Day

Step by step for MP1, who is learning to cook. Mmmm...

Early morning shopping trip ...

Separating the beans from the dirt and rocks.

The bad beans, rocks and dirt ...yuck.

10 am...washed beans in for a long soak (ideally
you'd do this the night before).

Chopping and measuring...bell peppers, salt, onions,
chili powder, cumin, garlic, pepper, & parsely...

Bringing the beans to a boil (4 pm.), cover & simmer...

Pinto beans are almost done (~1.5 hrs.)

Sautee bell peppers, then onions, then garlic...

then add parsley...

Browning the beef and pork (I've doubled the recipe...
so it takes two big skillets/pans; you'll only need one).

Drain beef, add to pork, then add salt, pepper, cumin, and chili powder....
Stir veggies back in.

Add meat and veggies to bean and tomato pot.
Cover. Simmer, simmer, simmer...
And NOW, for the veggie chili:

Sautee the onions and garlic...

Drain and rinse the beans...

Add beans, tomatoes, & chili powder to the onions and garlic...

Add tomato paste and pepper.
Stir, cover, simmer, simmer, simmer...

Let cool, and freeze for Super Tuesday (I mean SuperBowl).

awww...that's sad, but you are living in a state where I am sure there is lots of good chili.... although it's probably not as good as moms. :-)
